Beetroot & Horseradish Pickle
This recipe started with one of those pub conversations “I'm thinking of making beetroot pickle but I've got this idea to add horseradish to it. I don't know where the idea came from?” My mate Maurice replied, “I do, I told you about it! It's from a neighbour when we lived in Leicester!”

So, into the garden I go, trowel and spade in hand, to do battle with the horseradish patch. I have mine in a couple of 'man-hole rings'. Whatever you do, don't plant it in the garden – you'll end up with nothing but horseradish! It will get everywhere, under slabs, across your lawn, in your navel, it's indestructible (I lied about the navel bit!).
Boil your beetroot, mine were courtesy of Bob, another mate, and slice or dice – whatever you prefer. Wash, peel and grate the horseradish – do it in private – you're sure to cry!

Layer the beetroot and horseradish in jars and cover with vinegar – malt, wine, cider, spirit – whatever you fancy.

What's it taste like? I haven't a clue. I'll let you know in a couple of weeks or so.
